Freedom.

Today, because people close to me are going through a difficult time, I have to address the obvious, that we sometimes are taking for granted.

One of the most important conditions for the happiness is freedom. Maybe the most important one.

In today’s age, the age of internet, smartphones and social media being a very important part of our life, we take for granted the access to these means of communication also. We are basing our personal communication on them. We are basing our businesses on them. It all seems so simple and it seems it was like this forever and it will be like this until the end of time, even better with the technological improvement going on at this high rate.  But there are people that never had this right or lost it. In this category is now Turkey. They lost a few days ago the access to Twitter and YouTube.

I have a big respect for my Turkish friends because they love their country very much. Even the ones that are leaving outside Turkey are not forgetting their country and they are very close to their co-nationals.

Today there were elections in Turkey.

We watched together all day the events on TV, and being in a different country, we could be connected to all the means of communication that others, unfairly, couldn’t.

After the restriction of their rights the people that are suffering for this censorship, and many others, were hoping for a change. Unfortunately, it didn’t come yet. I believe that it will come soon. I had the experience in my life that some of the rights that now I consider basic were taken away by my country’s former  administration and I can understand the feeling. There is nothing worse for the human psychic than to keep it in the darkness. The darkness is a place where nothing can develop, people are reduced to a small version of what they could be, and the effects can be disastrous. But, after this experience, I know one thing : keeping the people in darkness cannot last forever. In the end, the human nature to explore and cross the limits is prevailing.

I wish all my Turkish friends the force to be strong until their human rights will be respected!

From me, now and forever, RESPECT.

Turkish breakfast

I looove breakfast! 🙂

But my husband loves it more than me, especially when I prepare it in his country’s style, which of course happens a lot, especially in the week-ends.

I will describe it according to my knowledge, which is not so limited, even if not born there, I always say ” I’m almost Turkish!” 🙂

From the health point of view, this is one of the most nutritious ways you can start your day.

The first most important thing about this type of breakfast is the tea. The Turkish tea is more than a tradition for Turkish people, and I will make a post especially about it, so keep tuning in. 😉

The tea is a must, it’s black tea and it has to be drank during the meal in small glasses.

The main ingredients of a good Turkish breakfast are cheese, butter, olives, tomato or cucumber salad, honey, different types of jam, kaymak ( a milk specialty) and eggs, cooked in different ways.

There are many types of Turkish cheese, called peynir, and I recommend you to try them all. 🙂 Generally in the breakfast people are having beyaz peynir (sheep cheese ) and Tulum peynir (goat cheese).

I will share with you some photos of our Turkish breakfast, today I cooked the eggs in one of the best ways I know, called menemen. photo 3

Menemen is delicious and simple to make, I will share the recipe with you also, so you can cook it in your own home.

The necessary ingredients for 2 person are :

– 3 tomatoes

– 1 onion medium

– 2- 3 green peppers not very spicy

– 8 tbspoones olive oil

– 4 eggs

– salt, pepper, chili flakes, mint

The tomatoes(peeled), peppers, and onion ( you can cook it without onion also, if you don’t like the taste) should be chopped in very small pieces. Starting with the onion, if you use, if not directly cook the peppers until soft and then add the tomatoes in a pan with olive oil, the cooking type. The original recipe uses butter instead of olive oil for the cooking, I am using olive oil to cook more in the Mediterranean way, but you can do according to your taste. After the tomatoes, peppers and onion are cooked you should add the eggs, whole, and mix them in the pan with a wooden spoon. Let all the ingredients cook for 1-2 minutes, until the eggs are done but please keep in mind that the menemen  should be runny, not dry. After, take it out of the stove, and add fresh pepper, mint and chili flakes (pul biber in turkish) according to your taste.

If you have any questions, please ask, I would be happy to answer! 🙂

Don’t forget, if you happen to go to Turkey or in a Turkish restaurant for breakfast, please do ask for this treat!

Enjoy ! 🙂

Don’t wait for it !

I am a big fan of “How I Met Your Mother” sit-com, which unfortunately will end next Monday. 😦 I’m sure I’m going to cry like a baby watching  this last episode. 🙂
Probably you know Barney from this show and his famous line Legen – wait for it – dary, right?
This is a funny line and all, but what I mean is that a lot of us are stuck in this wait for it time for…ever. 🙂
Sure, you don’t understand it at the time, and it’s no problem for a day or two but sometimes it lasts for years.
You know what I mean, right?
“I will be so happy when I will have that body I’m dreaming about “….” I will have the coolest life when I will be so skinny like the girls in the magazines, they sure look they have so much fun.”….. “I will be so happy when I get a boyfriend or a girlfriend”…  “When I will get married my life will be so much better”

Not generalizing of course, but I see it all around me, and because I went thru the same thing at some point, I don’t want other people to suffer pointlessly..

Guys, it’s not important…please believe me… ! It’s not a good idea to wait for something in the future, and forget to live now.
It’s only after, if you are lucky, that you will understand that there is no point to wait..don’t wait for the next kg or pound you lose to feel good…don’t wait for him or her to feel happy..
I know it’s hard to do and grasp in the beginning but it’s true.
Be happy now.Not tomorrow, now. Look around. Smell the flowers. Breathe deeply and connect with yourself. Only there, inside, you will find the peace and the completeness in order to be happy.
If you feel there is something wrong with you try to fix it, be it emotional or physical, but do it one day at a time and, while keeping your goal’s importance, give the moment that you are living it’s importance also.
Do what you like, think about what makes you happy. If you didn’t discover it yet, try to do it.
Whatever you do, don’t wait for the next day, or next year. Dress nicely according to your body and be the best you can now.
The universe might just notice and give you what you wish most. 😉
